Zucchini Pancake with Garlic Dipping Sauce

This is a common dish that originates from the north of China. It’s popular since it’s easy to make and doesn’t require many ingredients. The texture is soft and fluffy. A perfect choice for a casual brunch.

Zucchini is a classic choice for this dish. However, you can substitute it with many other vegetables such as cucumber, potato, carrot, etc. Therefore, if you have any vegetables that you cannot finish, you should definitely try this recipe out. The recipe is for 2 portions.

Ingredients:

For the pancakes (about 4-6 pcs):
1 zucchini – about 400g
3 eggs
2 dl flour
1 tsp salt
⅓ tsp white pepper
2 tbsp oil

Garlic dipping sauce:
1 clove garlic
2 tsp Balsamic Vinegar
1 tsp soy sauce
1 tbsp cold water

Steps:
1. Shred the zucchini into thin strips with a grater.

2.Add 1 tsp salt into the shreds. Mix them well, then set the mixture aside.

3. After 15 mins you should be able to see some water come out from the zucchini that is gathering at the bottom of the bowl, which means it’s ready for the next step.

4. Gather the shreds and squeeze them hard with your hands to release water further. This step is to separate the liquid from the zucchini so the batter will keep a stable and even texture.

5. Some people may remove the water but of course, we don’t want it to go to waste. Put the dried shreds back into the bowl. Then add eggs and white pepper.

6. Blend the mixture with a balloon whisk. Try to get the surface as foamy as you can.

7. Blend in the flour and mix all the ingredients into a smooth batter. Add 1 tbsp sesame oil (or regular veggie oil) at the end and mix it well.

8. Preheat your pan to medium-high heat with a drizzle of oil. Pour 1 ladle of batter into the center of the pan. Spread out the zucchini quickly yet gently with the back of the ladle.

9. Wait for the downside to get golden brown, flip, and keep cooking the other side until it gets color too.


10. Serve with the dipping sauce and enjoy!

For the dipping sauce, you can choose any dipping you like such as ketchup or BBQ sauce. However, if you are looking for a more authentic flavor, I strongly recommend you try the garlic dipping sauce. It’s super simple to make:

  1. Have one clove of finely chopped garlic.
  2. Add in all the other ingredients and mix well. Then it’s ready to serve!
